Cherry of a day...

Chocolate covered cherry cupcakes, yesterday's acheivement. I love the jarred cherries from Trader Joe's and Mike loves chocolate covered cherries so...

I used a basic recipe for chocolate cake, altered a little to reduce the fat content and added a bit of the cherry juice to the batter. Then when I poured the cupcakes I put a few cherries in the middle. The icing is a cherry flavored royal icing. Next time I'm going with a chocolate buttercream though. I will also be adding more of the cherry juice as it only had a hint of the cherry flavor unless you bit into an actual cherry. They were really good for a first attempt though.
