Crappy Cakes

I cannot make crab cakes to save my life. Tonight I had a wonderful dinner planned of crab cakes, sweet potato fries and cole slaw. The cole slaw and fries were good. The crab cakes were more like crab slag. Luckily, the corner market was still open and I picked up a couple of pork steaks from their hot deli. This of course, was after Nick the Butcher gave me a hard time. He knows whenever I hit the deli around dinner time it's because I've botched something.
My guess is that the crab cakes were too wet, or I shouldn't use canned crab or they hate me. No matter which it is, most likely the last, I am not going to attempt them again. I know when I've been beaten.

I don't do crab cakes either. It's something about being in the middle of the continent with no access to fresh crab maybe.

I'm with you when it comes to cooking from scratch, BUT, The BEST crabcakes I've found are frozen at Sams---Huge,lump crab, Delicious and I don't have to do a thing but pop them in the oven! I'll send the name next time I go!;)

I have a really super easy, delicious recipe for you..
1 box of herb stove top stuffing made as directed on the box..let it cool a little bit add to it 3 cans of drained crab meat. Mix well by hand (like a meatloaf) form into crab cake sized portions. Heat a dry skillet until screaming hot add a few tablespoons of vegetable oil and place crab cakes in about 2 minutes on each side until golden brown and crispy. since everything is already cooked you dont have to spend much time with ths recipe..you can freeze any left overs for a few months and heat the same way to crisp 'em up or heat in microwave.This recipe is also great for making mini crab cakes for appetizers..makes mega 1-2 inch crabby patties :o) enjoy!
